Celery is low in calories, provides vitamin C., folic acid, potassium, and is a source of fibre. Some herbalists believe that eaten in significant amounts it can reduce inflammation and help protect against cancer.
Certain chemicals in salary called phthalides are believed to reduce in the body the levels of certain hormones which constrict blood vessels leading to a rise in blood pressure.
However there are is no scientific evidence to this claim.
It is a myth that chewing the stalks of celery uses up more calories than the vegetable provides. Celery is 95% water.
Interestingly the celery leaves are in the most nutritious part of the plant. They contain more vitamin C., beta carotene, iron, and calcium than the stalks. Yet most supermarket chains provide celery in packaged bundles which are mostly stalks with just a few leaves attached for presentation.
If possible you should buy celery fresh from a farm shop or some other outlet where the celery is presented with the leaves.
There are theories that celery may help to reduce the risk of certain cancers because of the chemicals it contains. However celery is also high in nitrates, which the body converts into nitrosamines (which have been linked to an increased risk of cancer). It is difficult to look to know the truth of this as one effect would seem to balance the other.
If you cook celery by brazing steaming or boiling this reduces the nitrate levels in the plant.
