Chicken Liver Pate

This recipe for Chicken Liver Pate is a great low fat starter, and many people love pate as a starter at Christmas. This recipe is also suitable for diabetics.
It’s a fairly standard recipe, but absolutely delicious.
1lb Chicken livers (500g)
1oz pure butter (30g)
4 small cloves of garlic
1 medium sized onion chunked
1 tablespoon brandy
3 tablespoons of creme fraiche (half fat)
salt and ground black pepper
Pop the chicken livers, butter, garlic and onion into a suitable ovenproof dish and put it into an oven which has been preheated to 200 degrees C, and let it cook for 30 minutes.
Then put the mixture into a blender or a food processor, add the brandy, creme fraiche, some salt, and a little ground pepper, and blend until really smooth.
Next transfer the mixture to a pate dish, sprinkle some ground black pepper over the surface, cover and chill in the refrigerator.
