Healthy Food Recipes – Easy Potato Wedges With Tomato Salsa

One of many low fat and tasty healthy food recipes which are ideal as a snack for four people. It’s quick to make and only takes 20 minutes.
3 large Potatoes, scrubbed and cut into wedges
1 tablespoon of oil
1 tablespoon of Paprika
Tomato Salsa
4oz (150g) Cherry Tomatoes (chopped)
½ of a small Red Onion (chopped)
1 tablespoon of fresh chopped Parsley
Cook the potato wedges in boiling water for 5 minutes, then drain and dry.
Preheat your grill while cooking the wedges.
Toss the potato wedges, oil and paprika together and place on a foil lined
baking tray and grill until crisp and golden (5 minutes).
Combine the Salsa ingredients (if you use a food mixer pulse lightly once or twice).
Serve the wedges under a sprig of Parsley on a plate with the Salsa in an accompanying dipping bowl.
