The Parsley herb has been used by people for thousands of years as a garnish, and for medicinal purposes, including a breath freshener, (which it does quite well).
Besides medicinal use, the Parsley plant was used by the Greeks to make the original Olympian Crowns for their athletes.
It is rich in Vitamin C. A. and Vitamin K. which can help ease chilblains. Additionally Parsley contains a source of iron and folates. It is also a herb with great antioxidant properties which can help prevent cancer and heart disease.
However Parsley does contain measurable amounts of oxalates, which are naturally-occurring substances, which if they become too concentrated in the body can crystalise and this can cause problems for people with already existing and untreated kidney or gallbladder problems. So if you fall into this category, be careful of the Parsley herb and treat it with caution, or abstain entirely.
