Potato Salad Par Excellence

This simple recipe will make a delicious potato salad.

6 Spring Onions chopped
8 Sun-dried tomatoes in oil (drained and sliced)
3 tablespoons of the sun-dried tomato oil
2 lbs (1kg) of new potatoes
2 tablespoons of Balsamic vinegar
Salt and freshly ground black pepper to taste.

Boil the potatoes until tender but still remain firm.
Drain well in a colander, and tip into a serving bowl.
Add the other ingredients and toss to mix, and serve
warm or cold.
